Once I started to have a lot of this garden cucumber Sweet and sour cucumber salad It’s the kind of salad I like on a side dish in summer. It’s a simple recipe that includes cucumbers, salt, white wine vinegar, sweetener of your choice, and black pepper, so what falls into the category of memorable cucumber salads is the addition of plenty of fresh dill.
I love dill, so I used more than the recipe called for, but even if you think you’re not crazy about dill, I beg you to try some in this salad. The other thing that makes the sweet and sour option such a great summer salad is that it’s prepared in advance, then chilled in the refrigerator for an hour (or longer) before serving.

What ingredients do you need for this salad?
- Cucumber
- Coarse grinding kosher salt (or coarse ground sea salt)
- white balsamic vinegar (affiliate link)
- granular local monk fruit (affiliate link) or any other sweetener of your choice
- Freshly ground black pepper
- chopped fresh dill
What if you don’t have fresh dill?
I did not try to make salad with dried dill herbs (referral link), but I think it would still be very good! I was only going to use a tablespoon or so of dried dill, and if anyone tries it, I’d love to hear how it works!
What sweetener did you use?
I’m a fan local monk fruit (affiliate link) This is what I was going to use for this power. But any sweetener you prefer will work, even sugar if you don’t care about carbs.
How to make sweet and sour cucumber salad:

- I like to make this with garden cucumber, but this European cucumber from Costco was also great in salads.
- I cut the cucumber into slices mandolin slicer (Referral link). (I got mine as a gift from a student about years ago!) You can also chop with a knife but the mandolin is faster and makes nice even slices.
- Place the cucumber slices in a colander set in the sink and sprinkle with 1 teaspoon of ground salt, mixing lightly with your fingers. Leave it on for 15 minutes.
- While cucumbers are drying, wash fresh dill, pat dry or pat dry with paper towels, then chop.
- Mix white wine vinegar together, local monk fruit (affiliate link) or sweetener of your choice, black pepper then add chopped dill. (I admit, I added a little dill after I took this photo!)
- After 15 minutes, pat the cucumbers dry with a paper towel. (The water released will wash away most of the salt.)
- Mix the cucumber and the sauce in a plastic container with a tight-fitting lid (or use a Ziploc bag).
- Refrigerate the cucumbers with the sauce for an hour or more, turning the bowl over a few times if you’re around.
- Her feet are cold.

Ingredients

2 European cucumbers, thinly sliced (see notes)

1 ton coarse kosher salt (or coarse ground sea salt)

1/2 cup of white wine vinegar

3 tons of local monk fruit

1/2 tsp. Freshly ground black pepper

1/4 cup chopped fresh dill (or more)
instructions
- Cut the ends of the cucumbers, but do not peel them.
- Cut it into thin slices. I used a 3mm blade in mandolin slicer (affiliate link), but you can also slice the cucumber manually.)
- Put the cucumbers in a colander and place them in the sink, and sprinkle with 1 teaspoon ground kosher salt.
- Mix it up a bit with your fingers until the cucumber contains some salt.
- Let the cucumber sit and let the water sit for 15 minutes.
- While the cucumbers are drying, wash the dill, pat it dry or pat it dry with paper towels, then chop it finely.
- Combine white wine vinegar, Monkfruit sweetener or sweetener of your choice, and freshly ground black pepper, then stir in chopped dill.
- After 15 minutes, pat the cucumbers dry with a paper towel. (Most of the salt had to be washed off with running water.)
- Place the cucumbers in a plastic container with an airtight lid (or use a Ziploc bag).
- Pour the sauce over the cucumbers and stir.
- Refrigerate the cucumbers with the sauce for an hour or more, turning the bowl over a few times if you’re around.
- Her feet are cold.
- This will keep in the fridge for a day or so, although I liked it better after only an hour in the fridge.
Notes
If you don’t have a European cucumber, use 4 medium-sized garden cucumbers. I’m a fan local monk fruit (Referral link) But use any local of your choice.
