I’ve been making this super easy tomato and cucumber salad every summer for years, because when you grow tomatoes and cucumbers in a garden you get to a point in summer where you want to eat them every day.
And even now that I don’t have a big garden anymore, I still make this salad all summer long. And I’ve learned that if you use young Persian cucumbers and young tomatoes that are good most of the year, you can achieve this with good results in spring and fall as well.
This is a simple tomato and cucumber salad, but what makes it great for me, and the reason I’ve been making it for so many years, is the idea of using blue cheese dressing with a touch of vinegar in my salad with feta cheese. I think these flavors are the perfect combination, and it’s clearly something I never get tired of.
And I even order the blue cheese dressing when I get a Greek salad in a restaurant, often to the chagrin of the waiter who thinks I’m crazy. If you love both blue cheese dressing and feta cheese, be open to the idea of using them in the same salad, because I promise you’ll love this salad. And when you see how easy and delicious it is, you’ll probably make it over and over like I do.

What can you add to your summer lunch salad?
If you like to switch it up every once in a while, there are plenty of things you can add to this salad like black olives or kalamata olives, chopped sweet peppers, Sliced pepperoncini (affiliate link), red onion, chopped herbs, avocado, radish, shrimp, chicken pieces, or tuna.

Tips for making summer lunch salad:

- Slice the tomatoes and let them dry in a colander placed in the sink.
- Cut the ends of the cucumber and discard, and slice the cucumber.
- Whisk blue cheese sauce with vinaigrette.
- Crumble and measure the feta.
- Stir in the drained tomatoes with the cucumber slices and desired amount of sauce, then gently toss in the feta cheese.
- Season the salad with plenty of freshly ground black pepper and serve.

6 small cucumbers (see notes)

6 small tomatoes, quartered and drained

1/2 cup crumbled feta cheese (or more)

Freshly ground black pepper to taste
Sauce ingredients

1/2 cup blue cheese dressing (see notes)

2 T vinaigrette (see notes)
instructions
- Cut the tomatoes into quarters or eighths and put them in a colander to drain. Cut the edges of the cucumber and cut it into slices. (If you’re not using a small cucumber, you may want to peel it into slices.)
- Whisk blue cheese sauce with vinaigrette.
- Crumble and measure the feta.
- Mix the drained tomatoes and cucumber slices together with the desired amount of sauce. (I used about 1/4 cup of the dressing. Keep the rest in the fridge for another salad.)
- Gently mix in the feta cheese.
- Salad seasoned to taste with a generous amount of freshly ground black pepper and served.
- The leftovers of this salad are still very good when it’s been refrigerated overnight, but it’s definitely better when it’s fresh.
- I recommend making the full amount of the sauce, but chopping fresh tomatoes and cucumbers each time according to how much you are going to eat.
