Originally I got this great recipe for Spinach strawberry salad From a reader named Robin Oliver, it has been a favorite on the site over the years. And while the original photos of this weren’t bad (and I even saved one for the post) recently, Cara decided this recipe was just too perfect for spring, so we gotta give it a makeover!
Now I no longer have a garden where dill grows, but I was still intrigued by the idea of dill in a salad with spinach, and I didn’t mind buying a small package of fresh dill at the store. I still really love the slightly sweet sound of this salad dressing with a touch of dry mustard and onion powder giving it a sweet and savory combination of flavours.
I used my favorite sweetener of course, to make the strawberry spinach salad lower in sugar, and when we tasted the dressing using Monkfruit sweetener we decided some people might want to make it a little sweeter, so I give you that option..
If you don’t like dill, or you don’t have fresh dill in your garden, I think this salad would also be delicious with chopped sweet basil! This is a lovely salad for a special occasion; I hope you enjoy!

About fresh dill:
dill It is a short-lived perennial herb that is used in many recipes. If you have dill in your garden, try to keep it trimmed during the summer so the dill doesn’t go to seed. At the end of the season, you can let it go to seed and replant the patch for next year’s dill.
What if I wanted a sweeter dressing for my strawberry and spinach salad?
When making this salad, I recommend you stir the dressing ingredients together and then taste the dressing with a spoon. If you’d like it to be sweeter, just add 1-2 tablespoons Local monk fruit (referral link).
Can you use frozen strawberries in your spinach salad?
I haven’t tried using frozen strawberries in a salad like this strawberry spinach salad. And while I guess it might not be bad, I honestly think fresh strawberries are always going to be better for a salad like this.
What can you add to strawberry and spinach salad?
I think this salad is just as amazing as the recipe was written. But if you want to switch it up occasionally, you can add feta, goat cheese, or gorgonzola cheese, or substitute the almonds for walnuts or pecans.
Is strawberry and spinach salad low carb?
Strawberries and spinach both have lower carbs, but this recipe is broken down into six servings specified by the updated recipe and contains 9.7 net carbs per serving. Not bad for a party salad you’d make for a special occasion.

notes
Seven cups of baby spinach is just under 8 ounces of spinach. The recipe could be doubled if you’re making it for a larger group, but it just doesn’t go over well.
Two cups of sliced strawberries equals one pound of fresh strawberries.
I used Lakanto Local monk fruit (referral link) for this recipe, but use your preferred sweetener.
This recipe is adapted from a recipe Robin Oliver sent me. Robin got it out of luck asking the host for the recipe.

Low Carb Diet / Low Glycemic Diet / South Beach Diet Suggestions:
When made with an approved sweetener, this strawberry and spinach salad is surprisingly low in net carbs, so it can work as a salad especially for low-carb diets, but it’s probably not keto-friendly. It would also be a good option for Phase 2 or 3 of the original South Beach Diet.
