As an adult, I continued to love raw and cooked cabbage, not only for the flavor but also because it’s an inexpensive, nutritious, and diet-friendly ingredient.

How to make Spicy grilled cabbage:

- Preheat the oven to 450°F/230°C. Spray a baking sheet with nonstick spray or oil.
- Cut the cabbage into four pieces of the same size and remove some of the outer leaves.
- I used to trim the core, but thanks to a reader named Fred who kept the core connected and cut it short after he cooked the cabbage. He reports that this made it a lot easier, so I’m switching to Fred’s method!
- Carefully cut each piece in half to make 8 wedges of the same size, keeping the core attached.
- Place each piece of cabbage on the baking tray.
- Whisk together the oil, lemon juice, sriracha sauce, and vegetable sal or salt. Then brush the mixture over the cabbage with a pastry brush.
- Carefully flip each piece of cabbage and rub the other side, reserving some liquid to clean up when flipping the cabbage.
- Roast in the center of the oven for 15-17 minutes, or until the edges of the cabbage begin to turn brown.
- Use a large stir-fryer to carefully flip the hot cabbage pieces, then brush them again with the remaining lemon oil and sriracha mixture.
- Roast for another 15-17 minutes, or until the second side begins to turn brown.
- Remove from the oven and place on a serving platter, and sprinkle with sesame seeds if using. Serve hot.

- Roast in the center of the oven for 15-17 minutes, or until the edges of the cabbage begin to turn brown.
- Use a large stir-fryer to carefully flip the hot cabbage pieces, then brush them again with the remaining lemon oil and sriracha mixture.
