I’ve updated this recipe for Spaghetti with Sausage and Arugula, so you can now make it with Palmini Low-Carb Pasta or whole wheat spaghetti. Whatever you prefer, this is a quick and surprising dinner with some of my favorite ingredients and great flavours.

There’s nothing I love more than Italian sausage, unless it’s arugula, so it’s easy to see why this recipe is for you. Spaghetti with sausage and arugula It is one of my personal favorites for a quick dinner. And did I mention there’s garlic, a touch of lemon, and freshly grated Parmesan cheese? I love this combination of flavors.
For many years, I made this dinner favorite with a moderate amount of whole wheat pasta, lots of sausage, and lots of watercress, and I loved it for dinner which was something I’d savor once in a while. But now I am very pleased with my pasta dishes balmini pasta (affiliate link) Made with hearts of palm, so I thought it would be fun to try it out for this recipe. It was a great success!
For the version with Palmini Pasta, we increased the recipe to four servings, using one can Palmini Low-Carb Linguini (Referral link). This makes Palmini Pasta more budget friendly, because I know it can be some pretty pricey ingredients. (I’ve heard that other brands of pasta hearts are cheaper, but I haven’t tried any others. Here’s the original recipe with spaghetti that served two meals If anyone still wants it.
What components do you need?
- Hot turkey or Italian sausage
- olive oil (affiliate link)
- Palmini Low-Carb Linguini (affiliate link) or whole wheat spaghetti
- Salt for the pasta cooking water (at least 1 teaspoon).
- baby arugula
- minced garlic (affiliate link)
- Chicken broth (or pasta-cooking water will work if you’re using whole wheat pasta)
- Fresh squeezed lemon juice (I used Fresh and frozen lemon juice
- Parmesan cheese, for serving, preferably freshly grated or grated Parmesan
What Italian sausage can you use?
I’ve made this recipe for years with a hot variety of Italian Jenni-O turkey sausage, but now I can’t find it in any of the stores in my area (SOB!) but the version you see in these pictures turned out beautifully with an Italian Kroger Hot Bork sausage. . You can either hot or light (sweet) Italian sausage, and use turkey or ham sausage, whichever you prefer or you can find it at your store.
What if you don’t like watercress?
The flavor of peppery watercress with spicy Italian sausage is one of the reasons I like this dish so much. But I know some people don’t enjoy arugula and I thought this would be delicious made with baby spinach for a milder version.
How can you make the whole wheat version lower in carbohydrates?
We loved the recipe made with Palmini Low-Carb Linguini (Referral link). But if you want to use regular spaghetti and make a low-carb version, just double the amount of sausage and arugula and use less pasta.

How to make spaghetti with sausage and arugula with mini linguine:
(Scroll down for the full recipe with nutritional information for both versions.)
- drain Palmini Low-Carb Linguini (affiliate link) In a colander and rinse well.
- Heat the oil in a frying pan, then remove the sausage from the casing and cook until well browned, and crumbling as it cooks.
- While the sausage turns brown, bring a pot of water to a boil, and salt the water generously.
- Place the watercress in a large metal, glass, or crockery (not plastic) bowl.
- When the water starts to boil, add the mini pasta and cook 3-4 minutes.
- When the sausage turns nicely brown, place it over the watercress in the bowl.
- Add garlic to the pan in which you cooked the sausage and cook for about 30 seconds. Then add 3/4 cup of chicken broth and lemon juice and cook for 2 minutes.
- When the Palmini pasta is cooked 3 to 4 minutes, drain it well and place it over the sausage in the bowl.
- Leave it for two minutes to wilt the watercress.
- Add the broth mixture, lemon, and garlic from the skillet to the pot.
- Stir the mixture together, until the watercress is partially wilted and all the ingredients are well mixed.)
- Serve hot with freshly grated Parmesan cheese.
How to make spaghetti with sausage and arugula with whole wheat spaghetti:
- I used to make this with hot Italian sausage for my favorite turkey but now I can’t find it (sigh!) Use any Italian sausage you want.
- Heat the oil in a frying pan, remove the sausages from the casing and simmer until well browned, crushing them with a blender during cooking.
- Bring a large pot of water to a boil, salt the water generously, and add the spaghetti.
- Cook pasta on low heat until fully cooked.
- While the pasta and sausage are cooking, place the watercress in a metal, glass, or earthenware (not plastic) bowl.
- When the sausage turns nicely brown, place it over the watercress in the bowl.
- Add garlic to the skillet and saute about 30 seconds. Then add ½ cup of the pasta cooking water (or chicken broth) and lemon juice and cook for 2 minutes.
- Once the pasta is just barely cooked, drain the pasta well and reserve another ¼ cup of the pasta cooking water.
- Then put the hot pasta over the watercress and sausage in the bowl and leave for two minutes to wilt the watercress.
- Add the water mixture, lemon and garlic from the skillet. Mix together (with additional pasta cooking water if needed).
- Serve hot with freshly grated Parmesan cheese.

Tomatoes, arugula, olives and no cook pasta sauce

2 tsp. olive oil

8 oz. 1 box of Palmini Hearts of Palm Linguini (or 8 oz. whole-wheat spaghetti)

Salt for the pasta cooking water (at least 1 teaspoon).

1 ton finely chopped garlic (to taste)

3/4 cup chicken broth

3 tablespoons fresh lemon juice (more or less to taste)

To make low carb mini pasta:
- drain Palmini Low-Carb Linguini (Affiliate link) In a colander set in the sink, rinse well.
- Heat the oil in a frying pan, remove the sausages from the casing and simmer until well browned, crushing them with a blender during cooking. (Don’t rush this step.)
- While the sausage turns brown, bring a pot of water to a boil, and salt the water generously.

- When the water starts to boil, add the mini pasta and cook 3-4 minutes.
- When the sausage turns nicely brown, place it over the watercress in the bowl.

To make whole wheat spaghetti:
- In a non-stick frying pan, heat the olive oil, then squeeze the sausage from the casing into the pan and brown well, cutting into small pieces while cooking.
- While the sausage is cooking, bring a large pot of salted water to a boil.
- Add spaghetti and cook 8-9 minutes, or until slightly cooked and still* (with a little bite).
- Put the watercress in a metal or glass bowl or a large crockery.
- When the sausage is well browned, drain if it contains a lot of fat, and then pour the sausage over the watercress.
- Put the pan back on the stove, turn off the heat to very low, add the garlic and saute for about 30 seconds.
- Add 1/2 cup pasta cooking water (or chicken broth) and lemon juice and heat for 2 minutes.
- When the pasta appears to be done, extract another ¼ cup of the pasta cooking water if you need it, then drain the pasta well and place it in the bowl with the watercress and sausage.
- Leave it for two minutes until the watercress wilts.
- Then add the water/lemon juice/pasta water mixture from a pan and stir all the ingredients together.
- If it seems dry, add a little more of the reserved pasta cooking water.
- Serve hot with parmesan cheese on top.
Notes
I used to use hot Italian sausage in turkey but recently I haven’t been able to find it. I made the version in these photos using Kroger’s Italian ham sausage. Use any sausage you like.

When made with low-carb Palmini pasta, spaghetti with sausage and arugula is great for a low-carb meal. You can reduce carbohydrates by using less pasta and more sausage and vegetables. If you can find Italian turkey sausage and use whole wheat spaghetti, this would make a great second-stage dinner for the original South Beach diet.
