Using a few easy-to-find ingredients, this Mexican-inspired shredded beef recipe takes just minutes to prepare and is ready in about an hour.
My favorite way to enjoy barbacoa is stacked over Keto Cilantro Lime Cauliflower rice with sliced avocado or Basic Keto Guacamole on the side.
And if you don’t have a quick pot, you can still enjoy my barbacoa recipe. Simply place all ingredients in a slow cooker and cook for 4 to 6 hours, low for 8 to 10 hours.

If you are still a newbie to the Instant Pot or thinking of buying one, let me quickly explain it to you.
Instant Pots are basically an electric pressure cooker. Maybe your parents or grandparents had a flat pressure cooker that beeped (much like a tea kettle) when the pressure came on? Instant Pots are basically the same stovetop pressure cookers but better!
Although instant pots are primarily known for their pressure cooker function, they are also known as multicookers because they have other cooking functions, which include steaming, frying and making yogurt, some of which can be used as slow ovens.
Whether you’re new to a quick pot or have had one for years, here are some general tips to help ensure all of your meals are cooked to perfection.
- Read your Instant Pot’s instruction manual. Yes, this may seem like a little thought, but it’s really important to read the instruction manual for your specific instant pot. Every brand and even model is different, and you need to know how to use your brand properly.
- Use at least 1/2 cup (60 ml) of liquid when pressure cooking. The liquid helps press into the instant pot to cook food. You can also use broth or bone broth to add more flavor to your recipes.
- Add about 10 to 15 minutes to your meal planning time. While the Instant Pot usually cooks in minutes, it takes about 10 to 15 minutes to reach pressure before the cooking time begins. Therefore, a 15-minute recipe will likely take approximately 30 minutes to cook.
- You can cook with frozen meat and vegetables without having to thaw it first. Just add about 5 extra minutes to the cooking time per pound (or 2 kg) of frozen meat you use.
- Use the fry function to add extra flavor to your meals. Roasting onions and meat before cooking gives your meal an unparalleled richness.
- Be very careful when opening the lid. Even after the pressure is released (naturally or quickly), there will still be a lot of steam in the pot. Make sure not to place your face directly on top of the bowl when opening it.
- Purchase several additional silicone seal rings. Even with washing after each use, the silicone rings tend to stick in order, which is unappetizing when cooking. Additionally, they tend to expand over time and will cause the Instant Pot to not seal properly.
- You may also want to purchase an additional stainless steel inner pot. If you cook multiple recipes with your Instant Pot, you can move from one recipe to the next without having to wash the inner pot in between.

Ingredients
- 3 1 pound (1.4 kg) roast beef, cut into large pieces
- 1 (4 ounces or 113 g) 1 can chopped green bell pepper (light or spicy)
- 1/2 medium onion (1 oz or 55 g) peeled and chopped
- 2 Garlic cloves, peeled and minced
- 1/2 cup (120 ml) beef broth or bone broth
- 2 tablespoons (30 ml) apple cider vinegar
- 1 tablespoon (12 gramscumin powder
- 1 tablespoon (3 g) dried seasoning
- 2 bay leaf (optional)
- Salt and pepper to taste
- To serve: large lettuce leaves, salsa, guacamole (optional)

- Place all ingredients in the slow cooker. Place the lid on the slow cooker and simmer for 4 to 6 hours on high and on low for 8 to 10 hours until the meat is very tender.
- Remove the bay leaves from the slow cooker and discard them. Use two prongs to slice the meat in the slow cooker and let it rest for 15 minutes to absorb the cooking liquids. Add salt and pepper to taste.
- Serve the barbacoa on its own or in a lettuce wrap with salsa or guacamole.
