This is the new recipe for peanut butter fudge It can help you get that chocolate + peanut butter without too many carbs. This is a freezer fudge recipe. Have you tried doing that before? It has the creamy chocolate flavor that makes fudge so appealing, but it’s made simply by combining the ingredients and cooling it in the freezer for a short time. And there’s a big chocolate-eating holiday this month, in case you need a reason to try making fudge!
Of course, if you’ve seen a dessert recipe on my site, you know it must be easy to prepare! (I’m not someone who likes spending time in the kitchen, that’s probably obvious.) It took Cara and I a few tries to perfect this recipe into something I wanted to share with you, but we loved the final result of this low-carb, keto-free, fudge-free fudge recipe. Dairy and gluten free!
When we tested the recipe, we knew you needed Liquid Monkfruit for a recipe like this as there are no liquid ingredients to help dissolve the sweetener, and this was the first time I had used this type of liquid sweetener. We experimented with the proportions a bit and added some sugar-free maple syrup as well until we had a peanut butter fudge that we thought was really good. Hope you give it a try if you like those flavors!

Can you make peanut butter fudge with chunky peanut butter?
The inspiring recipe uses creamy peanut butter. But I’m a fan of chunky peanut butter and that’s the kind I’ve always had, so I tried a batch with partly smooth and partly chunky peanut butter and loved it. I think I’d love it made with all the chunky peanut butter, too. But if you generally don’t like nuts in fudge, you’ll probably prefer smooth peanut butter.
What brand of natural peanut butter have you used?
I’m a big fan of Adams 100% Natural Peanut Butter (Referral link) This is what I used for this recipe. But any natural peanut butter that doesn’t contain added sugar will be fine.
What kind of liquid sweetener did we use?
We were Lakanto liquid sweetener for this recipe. I think most liquid sweeteners will work, and I’ll taste the mixture to decide how much sweetener you want so you can adjust. But I wouldn’t recommend granulated monk fruit or any other granular sweetener. We were really hoping that would work because so many people have it on hand, but the fudge made with the granular sweetener was definitely gritty in texture.
Should freezer fudge be stored in the freezer?
The answer to this is definitely yes! I definitely knew this when I had a candy bar sitting on a small plate next to me when I was reading. I was distracted by the book and when I looked up after I’d been reading for a while, the fudge melted into a puddle of liquid. (I suspect you can put it back in the freezer and refreeze, but I haven’t tried it.)
How to make peanut butter candy:

- Lined loaf pan with lid parchment paper (Referral link).
- Melt the coconut oil in the microwave until it melts.
- Whisk together peanut butter, coconut oil, cocoa powder, liquid Monkfruit, sugar-free maple syrup, vanilla, and a pinch of sea salt.
- Taste to see if you want more sweetener or maple syrup and add more if you like.
- When it tastes sweet enough for you, pour it into a loaf pan and place it in the freezer for 30 minutes to harden.
- Remove the fudge from the freezer and use parchment paper to remove it from the pan.
- Use a long, sharp knife to cut into 18 pieces.
- Store the fudge in the freezer in an airtight container.

2 TB Lakanto Monk Fruit Liquid Sweetener (see notes)

instructions
- Line a 9″ x 5″ loaf pan to a piece of bread parchment paper (Referral link). Half a sheet of paper will work perfectly for this. I haven’t tried a slightly smaller loaf pan but I think it will work.
- Melt the coconut oil for 15-20 seconds in the microwave, until it melts.
- Whisk together peanut butter, coconut oil, cocoa powder, liquid Monkfruit, sugar-free maple syrup, vanilla, and a pinch of sea salt.
- Taste the mixture to see if you want more sweetener or maple syrup, and add more if you like.
- When it tastes sweet enough for you, pour the mixture into a loaf pan and place in the freezer for 30 minutes, until firm. (I didn’t cover it but you can if you like.)
- Remove the fudge from the freezer and use the parchment paper to lift it out of the pan.
- Use a long, sharp knife to cut the waffle into 18 pieces.
- Store sliced fudge in the freezer in a container with an airtight lid.
Notes
I tried the recipe with smooth and chunky peanut butter. I used Adams 100% Natural Peanut Butter.
I haven’t tried this with other liquid sweeteners but I think it will work.
The salt doesn’t dissolve much so I will use finely ground sea salt if you have it.

Low Carb Diet / Low Glycemic Diet / South Beach Diet Suggestions:
This is a good dessert option for any low carb or keto diet. Peanut Butter Fudge was probably high in fat in the original South Beach Diet, but it’s clearly good for the new Keto version of South Beach. (The serving size is pretty small, so I personally wouldn’t worry about taking it in South Beach as an occasional treat, but some people may disagree.)
