Even in these days when beef is a lot more expensive than it used to be, I bet a lot of people still love making a steak like this. Grilled steak with olive sauce for a special dinner. And of course there’s one of the special dinners coming up this month!
When you cook steak dinner indoors on a grill pan, you can enjoy it any time of year. And sure you can make this grilled steak recipe on an outdoor grill too, but I love my cast iron grill pan when the weather isn’t grilling!
For this grilled steak recipe, I used two large New York strips that I cut in half to make four 6-ounce servings of steak. This makes it very affordable, and you can still enjoy plenty of delicious grilled cuts of meat. It really is a delicious idea for a special meal; I hope the pictures will tempt you to try it if you’re a fan of steaks!
What components do you need?
- Top sirloin, top sirloin or New York steak
- olive oil
- Preferably rub steak Rob Steak Szeged (affiliate link)
- Salt and freshly ground pepper
- minced garlic (affiliate link)
- salt
- Dijon Mustard (affiliate link)
- Fresh lemon juice, I used my own Fresh and frozen lemon juice
- High quality pitted black olives
- Pitted green olives
- Pitted Kalamata olives
What kind of olives can you use for olive sauce?
This recipe uses three types of olives to make this delicious olive sauce. But if some of these olive varieties aren’t a winner in your home, just use the type of olive your family prefers.

I cooked the steak you see in these photos on Grill pan on stove top (Referral link) Made of cast iron. I like cast iron for this type of pan, but there are other good options as well.
How do you know if a steak is ready to your liking?

How to make grilled steak with olive sauce:

- This recipe uses canned black olives, green olives, and kalamata olives for the olive sauce, but feel free to substitute any olives you prefer.
- Put the sauce ingredients and half of the olive oil into a food processor.
- Beat until olives are coarsely chopped, then blend on high speed for a few seconds
- Remove from processor and stir in olive oil.
- Trim the fat as much as you prefer. I cut two very large slices of New York in half.
- Rub steak on both sides with olive oil, salt, pepper and Rob Steak Szeged (affiliate link), Kalyn’s . Montreal Steak Seasoningor a steak rub of your choice.
- Place a cast iron grill pan over the stove, turn the burner to medium, and heat the skillet for a few minutes. (If the pan starts to smoke a little, it’s hot enough!)
- Place the steaks diagonally and cook until grill marks appear, about 3 minutes.
- Rotate and cook for an additional 3 minutes on the first side, or until you see nice grill marks when you turn the corner.
- Then flip and cook for 3-5 minutes on the second side, depending on how you prefer.
- I cooked the steak an inch thick for exactly 10 minutes and it was perfectly medium rare.
- If you have a file instant read meat thermometer (Referral link), this is the time to use it.
- Of course, steaks can also be cooked on any type of outdoor grill.
- Let the steak rest for 5 minutes, then serve with the olive sauce spooned on top.

- Remove the steaks from the refrigerator and leave to room temperature.
- This recipe uses canned black olives, green olives, and kalamata olives for the olive sauce, but feel free to substitute any olives you prefer.
- Put the garlic, salt, Dijon mustard, lemon juice, olives, and half the olive oil in a food processor or small chopper.
- Beat until olives are coarsely chopped, then blend on high speed for a few seconds to combine all ingredients.
- Remove from preparation, place in a large glass measuring cup or bowl, and stir with the rest of the olive oil.
- Trim fat from steak (as much as you prefer). I cut two very large New York strips in half to make four 6-ounce slices. stakes.
