It’s no secret that I love him Low carb bowls Because of the way they make leftovers in the freezer, and others have to agree Casseroles are some of the most popular recipes on this site! But I also love casserole when I need some comfort food in my life and this Lasagna without noodles with sausage and basil It is cheesy, comforting and absolutely delicious.
It’s definitely comfort food weather, so I’m reminding you of this delicious low-carb lasagna recipe Favorite Friday Pick this week. It was three fun grocery store finds in a row that inspired me to create this recipe, and after we worked on it a few times to get it just right, the final version was absolutely delicious!

- Prefer a low-sugar pasta sauce Pasta Rao Sauce (affiliate link)

What products inspired this recipe?
the Folios Parmesan Cheese Wrap Found at Costco first inspired this lasagna. The sheets are a hard roll made of cheese, about the thickness of a tortilla and they are gluten free and contain only one carb each, and when I shared about Folios on Instagram I was touched by how many people loved them.
If you can’t find Folios, please don’t let that stop you from making this delicious lasagna! Use slices of hard cheese like Provolone or low-carb lasagna as pasta Mini lasagna noodles (referral link) to replace Folios.
When the idea of making a noodle-free lasagna popped into my mind, I probably didn’t do it right away until the next time I went to the grocery store I found it. Rao basil tomato sauce (affiliate link) It has half the carbs as the low-sugar dressing I’ve been using. Then on the same shopping trip I discovered that the store had fresh basil plants! I love fresh basil and it added so much flavor to the sauce for this low carb lasagna!
Choose the lowest carb sauce you can find if your store doesn’t have Raos. (I do not accept money to promote products, and none of the companies mentioned in this post have any idea that I am offering them.)
What if you don’t have fresh basil?
You can use dried basil or chopped basil in a tube for the sauce if you don’t have fresh basil. Or even a few tablespoons of basil pesto will add a nice basil flavor to your sauce.

Steps to make this low carb lasagna recipe:

- Preheat the oven and spray a casserole dish with non-stick spray.
- Heat the oil in a large deep frying pan and fry the chopped onion; Then push the onions to the side and cook the ground beef and Italian sausage in the same skillet.
- Add the Rao sauce (affiliate link) To the meat mixture and simmer until the sauce is thick.
- While the sauce is simmering, chop the basil (or use Grass scissors (Referral Link) Like I did if you had it!)
- Stir the chopped basil into the sauce.
- Mix together the cheese or ricotta, beaten egg, 1/2 cup Parmesan, garlic powder, and dried herbs. (We tested the recipe with both cream cheese and ricotta and preferred cottage cheese, but take your pick!)
- I used a wonderful Le Creuset baking dish that I bought at Williams Sonoma with a generous gift certificate I got from my brother Dave and his wife Amy, thanks guys! Cut the foil in half and cover the bottom of the plate. (I only needed two sheets per layer for my size dish, if your dish is a little wider or taller, you may need three.)
- Spread half of the gravy over the chips.
- Then we make a layer of half of the cottage cheese mixture, followed by half of the mozzarella.
- Make another layer of each of the folios, meat sauce, and the cottage cheese and mozzarella mixture. Sprinkle grated Parmesan cheese on top.
- Bake Low Carb Lasagna with Sausage and Basil for 40-45 minutes. (We cooked the lasagna in the photo for 45 minutes but I’ll start checking after 35 or 40 minutes.)
- Serve hot and enjoy! This freezes well and reheats beautifully in the microwave or in the oven.

1 ton of olive oil

1 medium onion, finely chopped

1 pound lean ground beef

1 19.5 oz. pkg. Hot Italian Sausage Turkey (see notes)

1 jar (24 ounces) reduced-sugar pasta sauce (see notes)

1/2 cup chopped fresh basil (or use a few teaspoons of dried basil or a few tablespoons of basil from a tube if you don’t have fresh basil).

2 cups cottage cheese (see notes)

4 eggs, beaten well

1/2 cup coarsely grated Parmesan cheese
-
1 tsp. Italian herbal blend
-
1 tsp. garlic powder
-
4 wafers coated with Parmesan cheese (see notes)

2 cups grated mozzarella cheese
-
1/3 cup extra coarsely grated Parmesan cheese for sprinkling on top (maybe optional, but it’s fine)
instructions
- Preheat oven to 375°F/190°C and spray a deep rectangular casserole dish with nonstick spray. (See notes about the dish I used.)
- Heat the olive oil in a large deep frying pan over medium-high heat and sauté the chopped onion until it starts to brown.
- Then push the onions to the side of the skillet and crumble in the ground beef and Italian sausage, pressing the sausage out of the casing. Cook the ground beef and Italian sausage, loosening them from the charring, until they are well browned and all the resulting liquid has evaporated.
- Add the Rao sauce (affiliate link) To the meat mixture (rinse the jar with a little water if you like) and simmer until the sauce thickens, about 10 minutes.
- While the sauce is simmering, chop the basil (or use Grass scissors (Referral Link) Like I did if you had it!)
- Stir the chopped basil into the sauce and turn off the heat.
- Mix together cottage cheese or ricotta, beaten eggs, 1/2 cup Parmesan if using, garlic powder, and dried herbs.
- Cut the foil in half and line the bottom of the plate with the straight edge along the edge of the plate. (I only needed two sheets per layer for my size dish but larger casserole dishes may need three.)
- Spread half of the gravy over the chips.
- Then we make a layer of half of the cottage cheese mixture, followed by half of the mozzarella.
- Make another layer of each of the folios, meat sauce, and the cottage cheese and mozzarella mixture. Sprinkle grated Parmesan cheese on top, if using.

Notes
I used a wonderful Le Creuset baking dish 7.5 x 11.5 x 3 inches deep; Try to use a deep dish if you can but anything close to that size will work.
I used My favorite is the Italian sausage, the hot turkey For this recipe, but pork sausage would be good too! You can use ricotta instead of cottage cheese if you prefer. Use sliced hard white cheese like Provolone if you don’t have Folios, or have heard from readers who use Mini lasagna noodles (affiliate link) for pasta layer. You may need a total of 6 sheets to cover the dish if you are using a larger and shallower dish than we had. I was excited to find Rao basil tomato sauce (referral link) at my grocery store; This sauce only has about 20 carbs in a full bowl.

Low Carb Diet / Low Glycemic Diet / South Beach Diet Suggestions:
No-noodle lasagna with sausage and basil is a great low-carb lasagna recipe for low-carb and keto diet plans. The parmesan cheese roll is probably a little too fatty for the original South Beach system, but personally I’d eat this at any South Beach stage. South Beach recommends lean beef, lean turkey sausage, low-fat cottage cheese, and reduced-fat cheese for this recipe, and the low-carb and keto diet prefers high-fat ingredients.
