When I published the new low-carb version of Pasta with sausage and turnipI told you about the good results I got when I made this favorite pasta recipe with Palmini Pasta! Today I am sharing this new recipe for Low carb Italian pasta saladAnd it’s another recipe that I loved when I made it with hearts of palm pasta! Kara I enjoy trying this product, and have become ardent Palmini Pasta fans!
This new recipe is used Palmini Low-Carb Linguini (affiliate link) Very quick and easy to set up, I was pleasantly surprised that it kept well for several days in the fridge. It would be the perfect pasta salad to eat in the summer or to make for a family dinner, and I bet most people would never guess it wasn’t made with regular pasta! The recipe is somewhat inspired by an old recipe for Spaghetti salad with Italian sausageSo if you didn’t think low-carb pasta would be a hit in your home, you might like it.
What is balamin pasta?
Balmini Pasta (affiliate link) It is a type of low-carb pasta made with hearts of palm. Her pasta variations include Palmini Linguini, Angel Hair (which looks like fluffy spaghetti), and lasagna. The same company also makes low-carb rice and low-carb mashed potatoes from hearts of palm. Cara and I have enjoyed trying the Palmini Pasta products, and we really love the taste of them.
Why is this a good recipe for using Palmini Pasta?
One drawback to Palmini Pasta is the price; Certainly it is much more expensive than regular pasta. That’s why I recommend using it in recipes like this one, as there are plenty of other ingredients in the dish to spread the pasta. This low-carb Italian pasta salad makes six servings from one can of Palmini Linguini, making it an affordable recipe to make with Palmini.
Does Palmini pasta need to be precooked?
For some recipes, you can probably get good results just by cooking the Palmini in the sauce. But after trying this recipe and another we’re working on, Kara and I definitely like to cook the linguine for five minutes in boiling, salted water before using it in the recipe. We feel that precooking gives the hearts of palm a “pasta-like” texture.
What ingredients do you need for this recipe?
Tips for making this recipe:

- We used one can of linguini for this recipe. (It also comes in a bag that contains a slightly smaller amount.)
- Discard the linguine in a colander and drain well.
- then use kitchen shears (referral link) and cut the linguini into shorter pieces.
- Bring a pot of water to a boil, add salt and linguine pasta and simmer for 5 minutes.
- While the linguine is cooking, slice the cherry tomatoes, drain the olives, chop the green onions, chop the fresh basil, and grate the Parmesan cheese.
- Drain the well-cooked pasta into a colander set in the sink.
- Mix the sauce ingredients together and add the chopped basil to the sauce. Then mix it with pasta.
- Gently toss together with sliced tomatoes, mini pepperoni, sliced olives, and green onions.
- Mix 6 tablespoons of Parmesan cheese and sprinkle the rest over the salad
- They can be served at room temperature or refrigerated, with more Parmesan cheese added at the table if desired.

Ingredients
- One 14 oz. Low carb mini linguini can
- water + 1 tsp. table salt linguine
- 1 cup cherry tomato slices
- 2.25 oz. olive slices can
- One 5 oz. Mini pepperoni bottle
- 1/3 cup chopped green onion
- 1/2 cup coarsely grated parmesan cheese
- 1/2 cup chopped fresh basil
- 1/3 cup Newman’s own olive oil and vinegar (see notes)
- 1/2 tsp. Italian herbal seasoning
- 1/2 tsp. garlic powder
instructions
- Put the linguine in a colander set in the sink, let the noodles dry well and drain well.
- then use Kitchen scissors to cut the linguine into shorter pieces. (This is important otherwise it will be difficult to mix the other ingredients evenly.
- Bring a pot of water to a boil, add plenty of salt and linguine noodles, and simmer for 5 minutes.
- While the linguine is cooking, slice the cherry tomatoes crosswise, in small circles about the size of small olives and pepperoni.
- Drain the sliced olives, chop the green onions, chop the fresh basil, and grate or grate the Parmesan cheese.
- After 5 minutes (or until tender, as you prefer when trying the pasta), drain the pasta into a colander set in the sink. Let it dry well and cool for a few minutes.
- Whisk the vinegar dressing, Italian seasoning, and garlic powder together to make the sauce.
- Add chopped basil to the sauce. Then put the pasta in a bowl and mix the sauce with the pasta.
- Gently toss together with sliced tomatoes, mini pepperoni, sliced olives, and green onions.
- Mix 6 tablespoons of Parmesan cheese and sprinkle the rest over the salad.
- It can be served at room temperature or refrigerated, with more Parmesan served at the table if desired.
Notes
You can use any low-sugar vinaigrette to make the sauce.

Low Carb Diet / Low Glycemic Diet / South Beach Diet Suggestions:
Low-carb Italian pasta salad with Palmini pasta would be suitable for any low-carb diet, including Keto. Palmini pasta should be fine at any point in the original South Beach diet, but South Beach definitely prefers turkey pepperoni, perhaps a little less than Parmesan.
