I use sugar-free ketchup to make my barbecue sauce, so my instant pot of ham and the slow cooker version linked below are both low in carbs. This really appeals to me because I’m definitely not a fan of sweet barbecue sauce; Most barbecue sauce tastes too sweet to me.
My version of pulled pork has plenty of delicious flavor and a touch of sweetness, but I promise no one in the family would guess this is low in carbs. I loved this one that was just served on a plate with cole slaw, but folks who don’t watch carbs can enjoy it piled on a bun! Hope you try the low carb pulled pork and see what you think.

Can you make low carb pulled pork in the slow cooker?
This recipe is an instant version of Low carb slow cooker pulled pork This has been a popular recipe on the blog for years, so if you prefer the slow cooker, make it instead.
How to make a low carb instant pot roast:

- Although I made a file slow cooker pull pork With the lean roast pork, I’d try the boneless pork shoulder that’s usually recommended for my Instant Pot version. But when I looked for roast pork shoulder, I went to three stores and only found huge packages. So I decided to test the recipe with two of these Roasted pork loin This is a good buy at Costco, and the pulled pork was just as tasty using the leaner pork. Of course, choose the type of pork you want to use.
- Whether you’re using roast pork or roasting a marbled pork shoulder, chop the pork opposite the grains into pieces and brown them well in the Instant Pot. (Browning adds flavor; please do not skip this step.)
- Then whisk together sugar-free ketchup, tomato paste, sweetener or golden monkfruit sweetener of your choice, apple cider vinegar, yellow mustard, Tabasco green sauce, Worcestershire sauce (gluten-free if necessary), and liquid smoke to make the sauce.
- Once pork is well browned (in two batches if necessary), arrange in Instant Pot and pour over 3/4 of the sauce mixture and 3/4 cup of chicken broth.
- Close the lid and set the Instant Pot to high manual pressure for 60 minutes.
- When the pressure cooking time is up, let it simmer for 25 minutes, then release the pressure if there is still pressure.
- Transfer the meat to a cutting board and strain the sauce if you think it needs it.
- Add the other quarter of the sauce you reserved to the liquid/sauce in the quick pressure cooker. Set a quick frying pan, over high heat, and let the sauce drop until thickened to your liking. This will probably take a few minutes, but watch to make sure the sauce doesn’t burn.
- While the sauce is reducing, chop the meat with two forks.
- When the sauce thickens, add the meat back to the Instant Pot and stir to coat with the sauce. Serve hot.

4 lbs. Grilled sirloin or grilled pork shoulder, trim the fat as much as you prefer (see notes)

1 T Penzey’s Pork Chop Seasoning (or any seasoning mix is good on pork)

2 tons olive oil (more or less, depending on the amount of fat in the pork.)

3/4 cup chicken broth
Sauce Ingredients:

3/4 cup sugar-free ketchup (see notes)

1/4 cup tomato sauce

1/2 c golden monk fruit sweetener, or more to taste (see notes)

1/3 cup of apple cider vinegar

1/3 cup yellow mustard (not Dijon)

4 teaspoons. Green Tabasco sauce
-
2 tons of Worcestershire sauce (Be sure to use gluten-free Worcestershire sauce if needed.)

3/4 tsp. Liquid smoke (maybe optional, but recommended)

- Trim the roast sirloin or roast pork shoulder if there is a lot of fat visible on the outside. Cut the roast pork into thick slices about 2 inches thick.
- Rub the pork on both sides using Penzey Pork Chops Seasoning (Continuing link) Or use another seasoning mix that works well on pork.
- Flip the Instant Pot over low heat, over high heat, add 1 tablespoon olive oil, and brown the pork chops on both sides, about 3-4 minutes per side. (You will likely need to do this in two batches, adding another tablespoon of olive oil as needed when browning the second batch, or browning all of the pork in a large skillet on the stove if you prefer.)
- Whisk together sugar-free ketchup, tomato paste, sweetener or sweetener of your choice of golden monkfruit, apple cider vinegar, yellow mustard, green Tabasco sauce, Worcestershire sauce or Gluten-free Worcestershire sauce (affiliate link), and Liquid Smoke to make the sauce.
- Place all of the roasted pork chops in the Instant Pot and pour over 3/4 of the sauce mixture and 3/4 cup of the chicken broth.
- Close the lid and set the Instant Pot to high manual pressure for 60 minutes.
- When the pressure cooking time is up, let it simmer for 25 minutes, then release the pressure if there is still pressure.
- Remove the meat to a cutting board and allow it to cool until completely cool enough to handle.
- Strain the sauce if you think it needs it.
- Add the other quarter of the sauce you reserved to the liquid/sauce in the quick pressure cooker. Set a quick frying pan, over high heat, and let the sauce drop until thickened to your liking. This will probably take a few minutes, but watch to make sure the sauce doesn’t burn.
- While the sauce is reducing, chop the meat with two forks.
- When the sauce thickens, add the meat back to the Instant Pot and stir to coat with the sauce.
- Serve hot. This will keep well in the refrigerator for a few days and can also be frozen.
