I’ve updated this recipe for Instant Pot Pinto Beans with Ground Beef, so it now has more beef and a bit less carbs! You can make this delicious soup in an instant pot or in a regular skillet on the stove.

A few weeks ago I updated the photos for Oldest pressure cooker recipe On my site, this recipe Instant Pinto Beans With Minced Meat This is the second oldest recipe I first made years ago when I had a flat pressure cooker. Of course I’ll make it now in the Instant Pot, but there are also instructions in the recipe for making it on the stovetop if you prefer this way.
I made this for the first time the day I ate a lot of dried beans. But now I don’t want a lot of carbs, so when we updated the photos, we also adapted this recipe into a version that has more ground beef, so it’s lower in carbs. And by the way, if you look at the photo of the Instant Pot Pinto Beans with Ground Beef and wonder why it’s not called chili, there’s no chili powder in this, so it’s definitely not chili! In fact, cilantro is one of the dominant flavors here, so if you’re one of those people who doesn’t enjoy cilantro, you’ll probably want to replace the cilantro with thinly sliced green onions or just look for a different stew recipe!
What components do you need?
- canned pinto beans (or see note below to start with dried beans)
- olive oil (affiliate link)
- minced meat
- Spike seasoning (affiliate link)

- minced garlic (affiliate link)
- dry Mexican Oregano (affiliate link)
- ground cumin (affiliate link)
- dried coriander (affiliate link) (optional, but recommended)
- chicken broth or Homemade chicken broth
- Tomato paste
- Canned small tomato cubes
- green onion slices
- chopped fresh coriander (optional)
- Fresh lemon juice
- Salt and freshly ground black pepper to taste
- Avocado, to serve (optional)
How to start with dried beans and cook them in a quick pot:
If you are not a fan of canned beans, you can easily Cook the dried beans in the slow cooker or in the instant pot. You will need to cook about 1 cup of dried beans to replace the two cans of beans.
Want to make instant pinto beans and ground beef lower in carbohydrates?
If you check the nutritional information, you’ll see that our change to double the ground beef and add more stock made this recipe contain about 22 net carbs per serving. If you want a lower-carb version, simply reduce the pinto beans to one can and add about another cup of chicken broth, for a more soupy version.
What if you don’t want to use cilantro?
You can omit dried and fresh cilantro for this recipe if you prefer, but if you’re not using fresh cilantro, I recommend doubling the amount of sliced green onions.

How to make instant pinto beans with ground beef:

- Since we were using 2 pounds of ground beef, we cooked the ground beef in a frying pan to get the best browning. Season the beef with spike seasoning or another all-purpose seasoning blend. I love the hamburger meat grinder (Continued link) You see in the first picture.
- While the beef is turning brown, drain the pinto beans in a colander set in the sink. You can rinse it off if you prefer but it’s not necessary for broths like this.
- Flip the Instant Pot over low heat, medium heat and heat the oil, then add the onions and let them cook for 2 minutes. Add garlic and cook for another minute, then add Mexican oregano, ground cumin, and dried coriander (if using) and cook for another 2 minutes.
- Add ground beef, beans, tomato paste, and canned tomatoes with liquid and chicken broth to Instant Pot.
- Close the lid and set the instant pot to manual, high temperature, 2 minutes
- When the time is up, let the pressure come off naturally for about 15 minutes; Then release any remaining pressure.
- When the pressure is released, open the lid and add the sliced green onions, chopped fresh cilantro (if using) and lemon juice and leave for about 5 minutes.
- Season to taste with salt and freshly ground black pepper.
- Serve hot with avocado slices to add to the table if desired.

How to cook in an ordinary soup pot on the stove:
- For canned beans, rinse and drain as described above.
- To use the dried beans, you will need to soak the beans overnight, drain, add fresh water to cover them a few inches and simmer until the beans are tender, about 45 minutes.
- Follow the instructions above for browning the meat, browning the onions with garlic and herbs, and sauteing a skillet with chicken broth.
- Combine browned beef, onion mixture, chicken broth, water, cooked beans, tomato paste, and canned tomatoes in a heavy soup pot, adding an additional cup of chicken broth for cooking in an open skillet.
- Simmer over low heat for 45 minutes, adding a little water if needed.
- When the soup appears to have cooked through, add the green onions, chopped cilantro, and lemon juice as above and cook for a few more minutes.
