This instant bean and pork soup is delicious and easy to make in the Instant Pot, or cook in a saucepan on the stove if you prefer. This soup has Southwestern flavors with cumin, green pepper, and green onions, and there’s an option to include cilantro if you enjoy it.
Instant Bean and Pork Soup to Try Later!
That’s a little hot Quick Bean and Pork Soup It’s the first soup I’ve made in years when I had a new pressure cooker, and it’s now my favorite instant pot soup. You can make soup with dried or quick-cooked pinto beans, or save a little time and start with canned pinto beans. Either way, this soup will be amazing.
Of course when I update images for a very old recipe I always try to improve it if I think of changes that will be better than the original version. For pork and bean soup, I increased the amount of shredded pork to make a soup that was lower in carbs! I bet none of my readers would mind it. We also added some spicy Green Tabasco sauce to the finished soup for a slightly more spicy flavour!
And while I love the Instant Pot, I realize that some people aren’t converts or don’t have a quick pot, so I’ll also tell you in the full recipes section how to easily adapt his soup for cooking in a regular pot. No matter how you make it, Cara and I loved how this soup turned out, and it’s definitely great for a family-friendly dinner.

What kind of dried beans can you use?
I loved this soup using pinto beans to go with the spicy southwestern flavors, but you can use any white or navy beans if you prefer.
Do you want to cook dried beans in a quick or slow cooker?
If you are not a fan of canned beans, you can easily Cook the dried beans in the slow cooker or in the instant pot. You will need to cook about 1 cup of dried beans to replace the two cans of beans.
How can you make bean and ham soup lower in carbohydrates?
If you prefer, you can make a delicious, low-carb version of this soup using just one can of pinto beans.
What if you’re not a fan of cilantro?
If you have taste buds devoid of cilantro, leave out the fresh cilantro or use thinly sliced green onions.

How to Make Instant Bean and Pork Soup:

- Drain the canned beans into a colander set in the sink. (No rinsing needed unless you prefer to rinse.)
- Turn the Instant Pot to the frying, medium heat and heat the olive oil.
- Add onions and cook until onions wilt.
- Add the dried coriander, ground cumin, and canned green pepper and cook for another 2 minutes.
- Then add the beans, canned tomatoes, liquid, chicken broth, and Goya Ham flavor center (or pork rinds if using).
- Close the lid and set the instant pot to manual, high pressure, 3 minutes.
- Let the normal pressure release about 10 minutes, then release the remaining pressure using the quick release method.
- When all pressure is released, carefully remove lid, removing pork rinds if using, and stir in sliced green onions (and chopped fresh cilantro if using).
- Serve hot, garnished with thinly sliced green onions, green Tabasco sauce and lime to add if desired.

Two 15 oz. cans of pinto beans

One 14 oz. can diced small tomatoes (not drained)

1 packet Joya ham flavor base

6 green onions, sliced

1/2 cup chopped fresh cilantro (optional)

Green Tabasco sauce (add to the table if desired)

lime juice to squeeze into soup at the table (optional)

To cook soup in the Instant Pot:
- Drain the canned beans into a colander set in the sink. (No rinsing needed unless you prefer to rinse.)
- Turn the Instant Pot to frying, medium heat and heat the olive oil.
- Add the onions and fry until the onions soften.
- Add the dried coriander, ground cumin, and canned green pepper and cook for another 2 minutes.
- Then add the beans, canned tomatoes, liquid, chicken broth, and Goya Ham flavor center (or pork rinds if using).
- Lock lid and set to manual, high pressure, 3 minutes for instant pot.
- Let the normal pressure release about 10 minutes, then release the remaining pressure using the quick release method.
- When all the pressure is released, carefully remove the lid (remove pork skins if using) and toss in chopped green onions (and chopped fresh cilantro if using).
- Serve hot, garnished with thin slices of green onion, if desired.
To cook soup on the stove:
- Soak 1 cup of the pinto beans overnight, then cook on the stovetop in plenty of water for about 30 minutes, or until the beans are tender.
- You can also use two cans of pinto beans, rinse them well before adding them to soup.
- Fry the onions, spices and green pepper in the soup pot as mentioned above.
- Add the other ingredients as above, but increase the chicken broth to 5-6 cups.
- Simmer the soup over low heat for about 30 minutes, until the flavors seem well blended.
- Turn off the heat and stir in the chopped coriander.
Notes
2 1/2 cup diced ham was a Costco steak that weighed about one pound.
I used Homemade chicken brothCanned chicken broth, however, would be fine.
Important Joya flavor center (affiliate link) Often sold near Mexican food. If you have pork rinds, you can cook them with the stew and remove them instead of using the pork flavor base.
