I created this Pork and cauliflower casserole One January day a few years ago when I craved low-carb comfort food. I had ham and broccoli in the fridge, ideas Twice baked cauliflower He gave me the idea for this casserole with lots of cauliflower mixed with ham, cheese, greek yogurt, Parmesan, scallions and cheese. Love this as a delicious low carb dinner on a cold winter night!
Of course I had to include this when I updated my collection of Low carb and keto casseroles recipes. There’s not much I don’t love about low-carb casseroles, but one of the biggest reasons I love making them is the way they include leftovers.
Most low carb bowls also freeze well, including this one, and how I like to take dinner out of the freezer when I don’t feel like cooking! (You can use class for can be frozen to find more dishes that freeze well.)

What kind of pork should you use for this casserole?
If you want this recipe to be Keto, make sure you choose pork with no added sugar. I use thicker pork chops from Costco, but thicker sliced pork chops, and cubes cut from a whole ham will also work.
Can you make this recipe with frozen cauliflower?
I’ll be honest and say I’m not a fan of frozen vegetables, and I prefer freshly cooked cauliflower for this. But there are some comments on this post from people who made it with frozen cauliflower and reported that it works well. Whatever use you make, I’ll be sure the cauliflower is well drained before assembling the casserole.
What if you’re not a fan of Greek yogurt?
If you don’t like the tangy flavor of Greek yogurt, I would use sour cream for this recipe.

How to make Cauliflower and Pork Casserole:

- You need at least 6 cups of cauliflower, cut into small pieces.
- Cook the cauliflower in boiling, salted water until tender; Do not overcook.
- Drain the cooked cauliflower well (at least 5 minutes).
- While the cauliflower is cooking, chop up 2 cups of the ham.
- Soften the cream cheese in the microwave for a minute or so, then mix in the Greek yogurt (or sour cream), Parmesan cheese, and sliced green onions.
- Mash the cauliflower lightly (in the pan you cooked it in) then stir the sauce mixture until it is completely blended with the cauliflower and gently mixed with the pork.
- Season to taste with freshly ground black pepper.
- Spray a baking sheet with nonstick spray or olive oil, place the casserole mixture in the dish, and sprinkle with the cheese.
- Bake for 30-35 minutes or until the cheese is completely melted and beginning to brown and the mixture is hot throughout and begins to bubble slightly.
- Leave it for 10 minutes to absorb any liquid in the dish, then serve it hot and enjoy! This will keep in the fridge for a few days and reheats well.

6 cups raw cauliflower florets, finely chopped

1/2 tsp. salt (for the water to cook the broccoli)

4 oz. Soft cream cheese

3/4 cup Greek yogurt (see notes)

2 tons of finely grated Parmesan cheese

1/4 cup green onion, finely chopped

Freshly ground black pepper to taste

3/4 cup grated cheddar cheese (see notes)
instructions
- Preheat the oven to 350°F / 180°C.
- Fill a medium saucepan halfway with water, add 1/2 tsp. Salt, and it starts to boil.
- Cut the cauliflower into small florets, discarding the leaves and pulp.
- Place the cauliflower pieces in the water and cook on a low boil until the cauliflower begins to break through with difficulty. Check it often and don’t cook too much; The cauliflower will soften more in the oven.
- While the cauliflower is cooking, chop the ham into very small cubes and slice the green onions.
- Place the cream cheese in a glass dish or measuring cup and soften it in the microwave for a few minutes. (Or you can soften it over a preheated oven if you don’t have a microwave.) When the cheese is soft, add the Greek yogurt (or sour cream), Parmesan cheese, and sliced green onions.
- When the cauliflower is tender enough to begin to soften, pour it into a colander set in the sink and let it drain well (at least 5 minutes; don’t rush this step).
- Place the drained cauliflower back into the pot you cooked it in and mash it using a potato masher until it is just barely mashed with a few pieces remaining.
- Add dressing mixture and mix well with cauliflower; Then mix it gently into the ham cubes.
- Season to taste with freshly ground black pepper. (I didn’t use salt because the ham and parmesan are both salty).
- Spray a glass casserole dish or crockery with nonstick spray or olive oil. (I used a glass casserole dish approximately 8×10.) Pour the cauliflower mixture into the dish, spread evenly, and sprinkle with the cheese.
- Bake for 30-35 minutes, or until the cheese has melted, browned slightly, and the whole mixture is hot throughout and starting to bubble. Leave it for 10 minutes to absorb any liquid, then serve it hot.
- I suppose this freezes well, but I still haven’t tried freezing it because I didn’t have any leftovers.
Notes
You can also use sour cream if you’re not a fan of Greek yogurt; Yogurt contains slightly less carbohydrates. Definitely use more cheese if you’d like!
