Grilled shrimp skewers are full of flavor from chipotle, lemon, garlic and fish rub, and shrimp is quick and easy to cook on the grill! These delicious shrimp are served with a delicious low-carb sauce. Cook it on a grill pan if you don’t have an outdoor grill.

It’s barbecue season, and these grilled shrimp skewers are perfect for a warm-weather meal! Shrimp need to be soaked for about an hour in a mixture of ground chili powder, garlic powder, fish rub, lemon juice and olive oil. Then the marinade is drained, the shrimp are put on skewers and quickly grilled, and the shrimp is served with the delicious tomato and avocado sauce you see from the corner of the picture, or I’ll give you a few other options for a delicious sauce served with grilled shrimp. In the early days of my blog, my charming friend Marie’s dad sent me a recipe for it Grilled Nick Chipotle Shrimp with Black Bean Sauce. Over the years, this recipe has evolved into this recipe where you can use your favorite salsa, but this post is still dedicated to the memory of Nicholas Rhodes. I don’t think I’ve ever heard of shrimp cooking on the grill until I got this recipe from Nick, and it was just as delicious as all the foods he made.
What ingredients do you need for this recipe?
What shrimp did you use?
In this recipe, I use frozen raw shrimp from Costco, preferably 21-25 size. I buy shrimp that has had the shell and vein removed, but there are still tails, so it’s easy to pick up a piece of shrimp by the tail and eat it if you want to!
What kind of skewers are suitable for kabobs?
I also highly recommend any time you make kabobs or skewers Thick blade type skewers (referral link) or double skewers (Continued link) To prevent food from spinning on skewers. In these pictures you can see my well used double skewers that work perfectly with shrimp. If you don’t have either of these skewers, be sure to fold the shrimp and skewer each shrimp twice to secure it in place.
What’s the use of sauce with grilled shrimp skewers:
Although I made the recipe for the first time using black bean sauce In Nick’s recipe, over the years I’ve been topping this with a low-carb sauce to make it a delicious low-carb meal. In the picture you see served with delicious Avocado tomato sauce Which I love in tacos. If you want more avocado with shrimp, it will be delicious Avocado sauce. It will also be good with fresh tomato sauce And the Mango salsa with red pepper (and chili) It would also be a tasty option if you don’t mind eating more carbohydrates.
What if you don’t have an outdoor grill?
If you don’t have an outside grill (or the air isn’t grilling), grilled shrimp skewers can be cooked on Grill pan on stove with spurs or George Foreman Grill As well. (affiliate links) Remember that George Foreman Grill cooks both sides at once, so it will be too quick for the shrimp.
How this recipe works:

- Defrost shrimp overnight in the refrigerator. Drain well in a colander set in the sink.
- Whisk the ingredients together to make the dressing.
- Put the shrimp in a ziplock bag or a plastic container with an airtight lid, add the marinade, and marinate in the refrigerator for about an hour.
- Drain the shrimp and toss the marinade. Heat the grill on high.
- These are the loved ones double skewers (Referral link) I used to be perfect for shrimp. Whatever skewers you use, fold each piece of shrimp so the skewer goes through twice.
- Cook the shrimp until you start to see grill marks on the first side, about 2 minutes.
- Flip the skewers and cook for another 2 minutes on the second side, or until the shrimp are firm (but not hard) to the touch.
- Serve hot with a sauce of your choice.

Ingredients
- 20 frozen raw shrimp (see notes)
- 1/4 tsp. Ground Chipotle Chili Powder
- 1/2 tsp. garlic powder
- 1/2 tsp. Szeged Fish Rub (or another fish rub of your choice)
- 3 tablespoons fresh lemon juice (see notes)
- 3 tons of olive oil
- Salt/pepper to taste
instructions
- Defrost shrimp overnight in the refrigerator. Drain them well in a colander set in the sink. (If the shrimp looks wet, I will dry it with paper towels.)
- Whisk together ground cayenne pepper, garlic powder, Szeged Fish Rub, fresh lemon juice, olive oil, and a pinch of salt and pepper to make the dressing.
- Put the shrimp in a ziplock bag or a plastic container with an airtight lid, add the marinade, and marinate in the refrigerator for about an hour. (Don’t marinate longer than this or the seasoning will start to “cook” the shrimp.
- Drain the shrimp and toss the marinade. Heat the grill on high.
- Whatever skewers you use, fold each shrimp when placed on the skewer so the skewer goes through twice.
- Cook the shrimp until you just start to see grill marks on the first side, about 2 minutes.
- Flip the skewers and cook for another 2 minutes on the second side, or until the shrimp are firm (but not hard) to the touch. (Shrimp cooks very quickly on the grill, so be careful not to overcook them.
- Serve hot with a sauce of your choice.

I use 21-25 frozen raw shrimp from Costco. I used Fresh and frozen lemon juice.

I made the recipe and updated the post several times over the years, but in 2021 this recipe was updated to the current version I was making and options for a low carb sauce were added to serve with shrimp.
