And they are marinated and then grilled, because I think using a marinade for boneless pork chops is the best way to add flavor and prevent them from drying out on the grill. For this recipe, I used a lemon, garlic, and sage marinade, but see the tips below for two other options for pickles to use in this type of pork chop.

How to make grilled pork chops:

- I was only cooking two pork chops for fresh pics, but the recipe makes enough marinade for four pork chops, maybe more.
- If you are using these thick sirloin fillets, they will turn out better if they are pounded to an even thickness before soaking. I cut the fat and then pounded the pieces until they were about 1/2 inch thick.
- As you can see in the third picture, the pork chops will come back a bit after they’ve been crushed, but they’re still thinner and more even than they were.
- Whisk the dressing ingredients together.
- Soaking all day in a Ziploc bag or a glass or plastic container with an airtight lid will work best with thicker pork chops like these, and I’ve already seasoned the ones I cooked for fresh ones overnight and part of the night. (If you want to cook on a work night, trim the pork chops the night before, make the marinade and pour it on the morning before work and let the pork chops marinate in the fridge all day.)
- When you’re ready to cook, drain the pork into a colander in the sink and let the marinade run off while the grill heats up over high.
- Raise the heat to medium heat when placing the pork on the grill. If you want grill marks, place the pork chops at an angle on the grill grates and cook for 3-4 minutes (check to see if you have grill marks).
- Then rotate the pork chops so they go in the opposite direction and cook for another 3-4 minutes, or until you see cross grill marks when you lift one piece of pork to check.
- Turn pork over to second side and cook 3-4 minutes more, or until pork reaches 145°F/65°C when testing with a instant read meat thermometer. (affiliate link)
