The added flavor of garlic is what spices up the oil and the crunch of green onions that I think makes this cauliflower rice recipe so delicious, and I love using a lot of green onions! And whether you make this using freshly chopped raw cauliflower, buy chopped fresh cauliflower rice, or frozen cauliflower rice, this cauliflower rice is just as delicious with garlic and green onions. If you’re not a fan of cauliflower rice, I hope you’ll try this method of cooking it!

- Small pieces of broccoli of the same size, stems included (or bag of shredded cauliflower or frozen cauliflower rice)

I guess cauliflower rice can be a little tricky if you don’t care to season it well when you cook it, right? So I think flavoring the oil with fresh garlic cloves before you saute the rice, then stir-frying a generous amount of green onions to add some crunch and flavor makes this recipe the best way to cook cauliflower rice!
What kind of cauliflower rice do you need for this recipe?
I don’t find chopping cauliflower in a food processor is labor intensive, and when I make my cauliflower rice this way, I like to use 4 cups of shredded cauliflower. But sometimes you just need to use pre-chopped cauliflower rice or frozen cauliflower rice, and both options will also be delicious cooked this way. Fresh or frozen cauliflower rice comes in a smaller package than the four cups I use; See the different amounts included in the recipe if you are using one of these. You may also need to check the cooking time on the packaging to see if it needs to be adjusted.
Can you use less green onions for the recipe?
Of course, you can use less green onions for this recipe if you prefer. I think the added crunch of green onions just before serving makes this really good, so I encourage you to use a generous amount of green onions and give them a try!

How to make cauliflower rice with garlic and green onions:

- If you are making shredded cauliflower yourself, start with small pieces of cauliflower and press in a food processor until finely chopped.
- Also prepare 6-8 large cloves of garlic, cut them in half, and chop 1 cup of green onions.
- Heat the olive oil in a large nonstick skillet over medium-high heat and cook the garlic slices long enough to “season” the oil with garlic flavor. (This only takes a minute or so; don’t let the garlic burn.)
- Remove garlic, add cauliflower, and season well with salt and freshly ground black pepper.
- Cook the cauliflower over medium-high heat, stirring often, until it begins to soften and lose its raw flavor, about 3-4 minutes. (Check the packaging for cooking time if you are using purchased cauliflower rice or frozen cauliflower rice.)
- Turn off the heat, stir in the green onions and serve.

directions
- Cut the cauliflower, including the stems, into small pieces of the same size until you have 4 large cups of broccoli pieces.
- Using the steel blade, process 2 cups of the broccoli pieces at a time in a food processor, then beat in short batches until they are chopped fine enough to resemble rice, but slightly larger. I use baby Cuisinart Food Processor 7 Cups (referral link) for this one, which does a great job.
- If you are using a cauliflower bag, just open the bag!
- Peel the garlic cloves and cut them in half lengthwise.
- Chop enough green onions for the amount of broccoli you use.
- Heat the oil in a non-stick frying pan over medium-high heat until it feels hot when you hold your hand there; Then add the garlic cloves and stir until you smell the garlic.
- As soon as you see the slightest discoloration in the garlic, immediately remove the garlic and discard it. (Don’t let it brown or else the garlic will leave a bitter taste.)
- Add cauliflower to the hot skillet and season generously with salt and freshly ground black pepper.
- Stir in the cauliflower, stirring often, until softened and no longer raw, about 3 to 4 minutes. (Taste a little to see if it’s done to your liking; I prefer it still somewhat crisp.)

- Turn off the heat, stir in the green onions and serve immediately.
