Ingredients
Meatball Ingredients:
- 1 Green onion, finely chopped
- 1 Garlic clove, peeled and minced
- 1.5 1 pound (680 g) ground pork or any other ground meat of your choice
- Salt and pepper to taste
- 1 scrambled eggs
- 2 Finely chopped bacon slices
Ingredients for bok choy dish:
- Half a cup chopped tomato
- 2 Bunches of bok choy (or green beans or Swiss chard), roughly chopped
- 2 Garlic cloves, peeled and minced
- ¼ finely chopped onion
- Salt and pepper to taste
- 2 tablespoons (30 ml) Avocado oil for cooking
instructions
- Place and combine all meatball ingredients in a large mixing bowl. Use a spoon to form meatballs the size of a ping-pong ball.
- Heat the oven to 350°F (180°C). Line a baking tray with parchment paper and place the meatballs on top of the tray. Bake in the oven for 20-25 minutes until the meatballs have an internal temperature of 140°F.
- Add avocado oil to a frying pan and lightly brown the meatballs with the onions. Then add the rest of the ingredients and simmer for 10 minutes until the vegetables are tender.
