This new recipe for Chicken Broccoli Alfredo Casserole I appeared because people asked me over and over again on Facebook what I should be using Chicken curry casserole, cheese and broccoli If you don’t like curry powder! And one day after I asked four people about it, the idea popped into my mind to make a hearty casserole with chicken and cauliflower that didn’t contain curry.
Kara And I’ve tried this recipe many times, but the one we ended up with is the BEST one out of those packages of Costco roast chicken and Alfredo sauce from a jar! If you don’t feel like using convenience products like these, I’ll also give you tips for making your own sauce and cooking chicken breasts for chicken.
The casserole also had plenty of cheese, and we used a Kroger product called Alpine Blend which is a mix of Swiss cheese and thick grated Gruyere cheese, along with a little Parmesan cheese on top. But any grated Swiss cheese will do just fine. If you like the idea of a cheesy chicken and broccoli casserole, I hope you give this recipe a try. This is a quick, easy, and delicious weeknight dinner!

Why do I use RAW Alfredo Sauce?
I love Pasta Rao Sauce, both for flavor and low carb. But it is definitely more expensive than some brands. I try to stock up on them when they go on sale or buy them at Costco, but if another Alfredo brand works better for you, don’t worry. Or if you want to make your own sauce, something like this Creamy cauliflower sauce or Keto Alfredo Sauce It will work for this recipe.
What if you don’t want to buy grilled chicken breast for this recipe:
We used about two pounds of Costco grilled chicken breast for the chicken. But if you prefer to cook your own chicken and shred it, you can use four medium boneless, skinless chicken breasts cooked in a little olive oil in a skillet over medium-high heat. Try to cook the chicken until it’s well done but not overcooked. (Uncooked chicken will release some liquid when it’s finished cooking in the casserole.)
Could you use more broccoli in this recipe?
We used six cups of broccoli shreds for this casserole but if you like a lot of broccoli, a cup or two of broccoli won’t hurt. And next time I make one, I think I’ll use more broccoli!

How to make chicken and broccoli alfredo casserole:

- Preheat the oven to 375°F / 190°C. Spray the tagine with olive oil or non-stick spray.
- Chop the onions into cubes, heat the olive oil in a large frying pan and cook until the onions are slightly brown. Add the minced garlic and cook for an additional 1-2 minutes.
- When the onion and garlic have softened, add the Alfredo sauce, poultry seasoning, ground thyme, spike seasoning, black pepper, and sour cream. Stir and let it simmer over low heat.
- Cut up the grilled chicken (or the chicken breast you cooked yourself) and add to the sauce. Simmer about 5 minutes.
- Chop the broccoli into bite-sized pieces, put in a bowl (or a large 8 quart measuring cup like the one I used) and microwave 1-2 minutes, depending on how cooked you prefer.
- Gently toss partially cooked broccoli with chicken sauce mixture. Add 1 cup of grated Swiss cheese and mix gently.
- Transfer the mixture to the casserole.
- Top with the remaining Swiss and Parmesan cheese.
- Bake for 25-30 minutes, or until bubbling hot and starting to brown on top.
- Serve hot.
- This will keep in the refrigerator for several days. It’s also not bad when it’s been frozen, thawed, and reheated, although broccoli will become softer after being frozen.

- Spray a 9″ x 13″ casserole dish with olive oil or nonstick spray.
- Cube a small onion, heat the olive oil in a large skillet (big enough to hold all the ingredients), and cook the onion over medium-high heat until it starts to brown slightly.
- Add the minced garlic and cook for an additional 1-2 minutes.
- When the onion and garlic have softened, add the alfredo sauce, poultry seasoning, ground thyme, spike seasoning, black pepper, and sour cream to the skillet. Stir the mixture and let the mixture begin to boil over low heat.
- Chop up the grilled chicken (or the chicken breast you cooked yourself) and add to the sauce mixture. Simmer about 5 minutes.
- Chop the broccoli into small pieces, put it in a bowl (or a large 8-quart measuring cup) and microwave the broccoli for 1-2 minutes, depending on your preferred degree of cooking.
- Gently stir the cooked broccoli into the chicken mixture and sauce.
- Add 1 cup of grated Swiss cheese and gently mix in the cheese.
- Then transfer the mixture of chicken, broccoli, and sauce to the casserole
- Top with the remaining Swiss and Parmesan cheese
- Bake for 25-30 minutes, or until mixture is hot and just starting to brown on top.
- Serve hot.

Notes
If you’d rather make your own sauce, I’d use Low-Carb Maven’s Keto Alfredo Sauce. If you have another good Alfredo sauce recipe, just use about 2 cups of the sauce.
If you’d rather cook the chicken yourself, I’d use four medium-sized, skinless boneless chicken breasts and cook them in olive oil in a skillet. Try to cook until the chicken is cooked through, but not overcooked. (If the chicken is not completely cooked, it will release a little liquid as it continues to cook in the casserole.)

This chicken broccoli alfredo casserole is a good dish for any low-carb diet, and it might work for keto if you’re not strictly limiting your carbs. The fat content was probably too high in the original South Beach Diet.
