I am so excited to share this recipe Baked chicken and asparagus with creamy curry saucebecause I’ve worked on it many times with Kara For a copy we thought was a keeper. And when we finally got the right mix of ingredients for our chicken and asparagus casserole that was creamy and cheesy and had just the right amount of curry flavor without being watery, we were so excited!

This is inspired by a recipe dating back in the archives of Chicken and asparagus with curry sauce Made with canned cream of chicken soup, an ingredient I rarely use these days. But even though I now prefer this new low-carb chicken and asparagus baked recipe, I remember how much I liked the old recipe back in the day, so I decided to leave the old recipe and string it together so people could eat it. their choice.

What kind of curry powder did you use to bake the chicken and asparagus?
Any mild curry powder will work with this recipe, but if you have Penzeys Sweet Curry, this is one of my favorites.
What if you don’t like Carrie?

How to make Asparagus Bread and Chicken in Creamy Curry Sauce:

- Preheat the oven and spray a casserole dish with non-stick spray.
- Trim the skinless and boneless chicken breasts and cut each into three longitudinal slices.
- Heat the olive oil in a large non-stick frying pan, add the chicken and season with it poultry seasoning (affiliate link) and a pinch of salt and pepper, and cook until the chicken is lightly browned on each side.
- Transfer chicken to a cutting board and cool; Then cut into small pieces and transfer to a bowl.
- While the chicken is cooking, cube the cream cheese and let it simmer on the counter, measure out the lemon juice, curry powder (affiliate link) Sour cream, mayonnaise and mozzarella cheese.
- Cut the asparagus into pieces. Add more olive oil to the skillet, add the asparagus, and cook for 2-3 minutes. Put the asparagus in a bowl with the chicken.
- Add the chicken broth to the skillet and bring to a boil over medium heat, scraping the bottom. Allow the broth to simmer for a few minutes, then whisk the lemon juice and curry power into the stock, bring the heat to medium-low, and add the cream cheese.
- Whisk while the cream cheese melts, and when it’s mostly melted, add the mayonnaise and sour cream, and whisk until the sauce is smooth.
- Gently toss the asparagus and chicken cubes to combine in the bowl, then mix in the sauce and 1 cup cheese and gently stir again.
- Place the asparagus and chicken mixture in the casserole dish and spread over the other cup of the grated cheese.
- Bake for 30-35 minutes, or until the casserole is bubbling and starting to brown on top.
- Serve hot and enjoy, and you might just have some leftovers for another meal!

1 pound or a little more asparagus, ends trimmed and cut into 2-inch pieces

1/2 cup of chicken broth

2 t lemon juice

1 t curry powder (or a little more if you really like the flavors of curry)

8 oz. Cream cheese cut into cubes and softened at room temperature

1/2 cup sour cream

1 // 2 cups of mayonnaise

2 cups grated mozzarella cheese

- Preheat the oven to 350°F / 190°C. Spray a large glass casserole dish or crockery with nonstick spray or drizzle with olive oil. (We used a narrow 8″ x 13″ dish, but any size close to that will do.)
- Trim fat and unwanted parts from the chicken breast, then cut each into three pieces lengthwise.
- Heat 1 t of olive oil over medium-high heat in a large nonstick skillet. When the oil is hot, add the chicken and season poultry seasoning (affiliate link) Season with salt and pepper, and cook until chicken is lightly browned on both sides.
- Remove chicken to a cutting board to cool; Then cut into pieces. Transfer the chicken to a large bowl.
- While the chicken is cooking, cube the cream cheese and let it simmer on the counter, and measure out the lemon juice, curry powder, sour cream, mayonnaise, and mozzarella.
- Pick up one piece of asparagus to see where the woody part ends; Then cut the asparagus into 2-inch pieces.
- After removing the chicken from the skillet, add 1 tsp. More olive oil, add asparagus, and cook for 2-3 minutes over medium-high heat. Put the asparagus in the chicken bowl.
- Add the chicken broth to the skillet and cook over medium heat, scraping the bottom to get browned chicken pieces. Allow the broth to simmer for a few minutes, then whisk the lemon juice and curry power into the stockpot, reduce the heat to medium-low, and add the cubed cream cheese.
- Whisk while the cream cheese melts, when it melts often, add the mayonnaise and sour cream, and whisk until the sauce is smooth.
- Gently toss the asparagus and chicken cubes to combine in the bowl, then mix in the sauce and 1 cup cheese and gently stir again.
- Place the chicken and asparagus sauce mixture in a casserole dish, sprinkle with the other cup of shredded cheese.
- Bake for 30-35 minutes, or until the casserole is bubbling and starting to brown on top. Serve hot

Low Carb Diet / Low Glycemic Diet / South Beach Diet Suggestions:
This chicken and asparagus bake is a good main dish for any low-carb or keto diet. It’s too high in fat to be approved on the original South Beach Diet, but you can create a version that’s South Beach Diet friendly by substituting low-fat cheese, cream cheese, sour cream, and mayonnaise.
