For anyone not Roasted cauliflower fan or fan of Low carb instant pot soupI apologize for so many of those types of recipes these past few weeks. I’ve already started working on this Cheesy cauliflower soup with bacon and green peppers For weeks, and I worked several times to get a copy that was really a goalkeeper.
Of course this is inspired by Low carb instant cauliflower soup which was very popular on the blog. But when I finally made a batch of this cheesy and slightly spicy cauliflower soup that I loved, I was so excited to share it with you! (And Jake And Kara They both love it too!)
Can you make instant cauliflower soup on the stovetop?
Cauliflower soup with cheese is easy to make on the stove, too, if you don’t have one instant pot (referral link), so I’ll give you those instructions in the recipe. One of the tools that I highly recommend for making this kind of soup is immersion blender (referral link). Having a stick blender that can blend soup directly into your Instant Pot or soup pot eliminates the mess and potential danger of trying to blend hot soup in a food processor. If you do not have an immersion blender, please use extreme caution mixing hot soup; This is the only hard part about making this delicious soup!

canned food Green pepper cubes (affiliate link) I’m used to this cheesy cauliflower soup that’s Anaheim Chilis, not jalapenos! This chili just a little bit. You can use a spicy chile if you prefer, but we thought this was spicy enough to pay for a little extra green Tabasco sauce!

How to make Cheesy Cauliflower Soup with Bacon and Green Peppers:

- Heat the olive oil in the Instant Pot over low heat, over high heat and cook the chopped onion.
- While the onions are cooking, chop the cauliflower.
- Place the chopped cauliflower, chicken broth, garlic powder, and salt into the Instant Pot and cook on the manual setting at high pressure for 5 minutes.
- Use the quick release method to release pressure. (While the cauliflower is cooking, assemble the other ingredients.)
- Use a file immersion blender (affiliate link) To blend the soup directly in the bowl (or blend in a food processor or blender, being extra careful with hot soup.)
- Then turn the Instant Pot setting to KEEP WARM (or SAUTE, low heat if you think you’ll need more time.)
- Add the sharp cheddar cheese, white cheese, half and half, and stir until the cheese melts.
- Then add the can of chopped green peppers and the crumbled bacon.
- I will not skip green tabasco sauce (affiliate link) which adds so much flavor and a touch of spice to this soup!
- Serve hot, with more shredded cheese and bacon crumbles to add at the table if desired!
- We didn’t add anything else, but you can add things like salsa, sour cream, sliced avocado, or olives to the soup if desired.

1 medium-sized onion, finely chopped

1 large cauliflower, leaves removed and coarsely chopped, including the stem

1 tsp. kosher salt

1 cup grated sharp yellow cheddar cheese (see notes)

1 cup grated sharp white cheddar cheese (see notes)

1/2 cup and a half (see notes)

2/3 cup crumbled cooked bacon (see notes)

4 oz. Green pepper with juice can be cut into cubes (see notes)

1 T Green Tabasco Sauce (optional, use more or less to taste)
instructions
- Heat the olive oil in an instant pot over high heat. Add the chopped onion and cook until the onion has softened and just beginning to brown, about 4-5 minutes.
- While the onion is cooking, coarsely chop the cauliflower, including the stems. Add the chopped cauliflower, chicken broth, garlic powder, and salt to the Instant Pot and place on high manual pressure for 5 minutes of cooking time. When five minutes are up, use the quick release method to release the pressure.
- While the cauliflower cooks, assemble the shredded sharp yellow cheddar, shredded white cheese, half-and-half, crumbled cooked bacon, canned green pepper, and green tabasco sauce (referral link).
- When the pressure is released, use immersion blender (affiliate link) to mix soup right in the bowl. (Or use a food processor or blender to puree the cauliflower, being very careful with the hot liquid.) We made it very smooth, since you add bacon and green peppers for some texture, but leave a few chunks out if you prefer.
- Turn the Instant Pot to KEEP WARM (or use SAUTE, on low heat if you think you’ll need more time.) Add the shredded sharp yellow cheddar, shredded white cheese, and milk product of your choice, and stir until the cheese is just set. melted.
- Then add the crumbled cooked bacon and diced green pepper with the juice green tabasco sauce (referral link) (if you use).
- Serve hot, with more grated cheese and crumbled bacon to add on the table, plus other toppings to taste.
Burner Directions:
- Heat the olive oil in a medium heavy soup pot and cook the onions until they are soft and just beginning to brown.
- Chop the cauliflower while the onions are cooking.
- Increase chicken broth to 3 1/2 cups for stovetop version. Add the chopped cauliflower, chicken broth, garlic powder, and salt, bring to a boil over medium-high heat, and cook until the mixture barely begins to boil. Place the heat over medium-low and simmer until the cauliflower is very tender when pierced with a fork, about 20-30 minutes.
- Puree the cauliflower with an immersion blender or other bowl as described above. Check the amount of liquid and if the soup seems thin, let it simmer for a few more minutes until some of the excess liquid has evaporated.
- Add the grated cheese and milk product of your choice and stir over low heat until the cheese melts.
- Add the bacon crumbles, green pepper cubes, and green Tabasco sauce (if using) and toss to combine.
- Serve hot, with more crumbled bacon and shredded cheese to add to the table, plus other toppings to taste.
Notes
We used about 8 bacon strips, including bacon crumbles to add on the table; Use more or less bacon, whichever you prefer.
Use heavy cream of milk instead of half-and-half if you prefer. Chicken broth or canned chicken brother will both work for this soup.
