directione
The first step
Place parchment paper on two baking sheets and set aside. One will be used for raw cauliflower and the other for cooked.
The second step
In a bowl we combine our almond/cashew, tapioca or cassava, chili powder, paprika, onion, cayenne pepper, salt and pepper, in another small bowl, add eggs and 2 tbsp water. Add the cauliflower to a separate bowl next to the eggs and our mixture. This is the creation of the “baking” station. Dip each cauliflower in the egg mixture and cover it completely. Roll the mixture into the mixture and coat it, discarding any excess. Place on a baking sheet and repeat with remaining corn. *Note: Use one hand for the egg mixture and the other hand for the wet mixture to prevent your fingers from cracking.
The third step
Heat the air fryer to 375 degrees for 5 minutes. Once the timer is up, spray the bottom of the air-fryer basket with avocado oil and place the bowl of the culi in the air-fryer, keeping even spaces and spreading it. Drizzle the top of the cauliflower with avocado oil.
The fourth step
You will need to do this in batches if you have a small air fryer.
Air fry at 375 degrees Fahrenheit for 15 minutes. Tip: If you’re doing it in batches, place the cauliflower in the oven on the prepared baking tray. Once you’re almost done preparing the cabbage, heat the buffalo sauce in a small glass bowl. It is best to do this in the microwave.
Fifth step
When the baking pan is done, sprinkle the buffalo sauce over the cole on the prepared baking tray. Gently toss it in, making sure the bread doesn’t fall off. If you want to add crunchy cauliflower, you can put it back in the air fryer again at 400 degrees for 5 minutes.
Serve with celery and ranch dressing (order the Primal Kitchen one from Thrive Market). Enjoy!
